how about a bean salad?
I have a recipe for a gluten free Bean dish (cooked in the slow cooker so you can ignore it) and a strawberry spinach salad. Unfortunately no links..so…if you want them drop me a line and I’ll send them to you. 🙂
My standard bring along is(are?) deviled eggs. Everyone likes them and no one ever makes them for themselves. Could you put some ancho in them for cubano flavor?
I have my 4 ingredient throw it in the oven rice/salsa/chicken dish… Actually…come to think of it…I may have to make some.

My favourite side dish is green beans that have only been boiled in hot water for a little little bit. Then they’re soaked in a little lemon juice and a touch of seasoning – garlic seasoning, even Montreal Steak Spice, applied sparingly, is yum. Deelish!

How about a sliced veggie side dish? I’d suggest:
• tomatoes and thin-sliced cucumber with a splash of a light vinegar/olive oil (keep it away from the cat!) and a sprinkle of herbs
• avocado wedges
• red onion
• mildly spicy peppers (like pepperoncini, or maybe a Cuban alternative?)
Arrange it nicely on a big plate, maybe on a bed of lettuce, and you’re good to go! People can eat it like a salad, or they can add slices to their burger.
My other favorite summer salads are two easy corn salads.
1) Mix one part corn (one can or equivalent frozen corn), one part black beans (again, one can, but rinse them first), and one part diced tomato. Add 1/2 part red onion. Throw in a splash of vinegar (I like cider vinegar) and some fresh herbs (parsley or whatever you have on hand).
2) Mix 2 cans of corn (or equivalent frozen) with a large handful of chopped cilantro, juice of a lime or two and half a chopped red onion. If you are feeling sassy, also add finely diced jalapeno or other hot pepper.
Bonus — these both taste best after sitting for a while, so it’s fine to make ahead, or leave out at a party!

Here’s one. Since black beans are a traditional Cuban food, there’s black bean salsa salad. I make this a lot.
1 can rinsed black beans, 2 Tbsp salsa, 1 cup corn kernels, 1 cup carrot slices, 2 Tbsp lime juice, 1 clove garlic. Mix together. I usually add extra salsa and sometimes other stuff.
Another idea – Sometimes I’ll slice up some fresh vegetables, add some nuts and a dijon mustard based dressing and mix the whole thing together.

Hmm, cuban sliders huh? I think that’s what we Cuban girls call sleazy boys (just kidding!).
Anyway, being Cuban, no meal is complete without black beans and though my family would KILL me if I used canned beans (or better yet, if they knew I have used them in the past, haha), here’s a pretty fast and easy black bean recipe (though I like Sydney’s idea of a cold black bean salsa salad)

I agree that watermelon sounds good. Or even a fruit salad of different kinds of melon? (We never do the really “mixed” fruit salads in my family–just canteloupe, watermelon, and honeydew, cut into chunks and tossed in a bowl.)

Too bad, no plantains. Because when I pictured Cuban sliders, that’s exactly what came to mind: tiny burgers sandwiched between fried plantains.
Similar to what some people have already mentioned:
A can of corn (drained and rinsed), a can of black beans (drained and rinsed). Mix together and add some salsa to taste.
I like the black bean ideas! I make an incredibly easy black bean-corn dip: 1 can black beans, drained and rinsed, 1 10-oz pkg frozen corn (thawed at least enough to be able to stir), 2/3 c. salsa, and 1/2 c. sweet barbecue sauce. (I use Sweet Baby Ray’s, and think it has to be a sweet barbecue sauce to contrast with the salsa. ) Serve with tortilla chips.
I always bring the same dish because it’s super easy. Toss a brick of cream cheese on a plate, sprinkle shrimp over and around it, pour cocktail sauce over it, add more shrimp, garnish with green onions.
Philly cream cheese is a Kraft product and they’re really good about listing gluten (the cream cheese is gluten free). I usually use Crosse & Blackwell (gluten free) cocktail sauce but Del Monte and Beaverton make some too.

Chaos has a good idea. Or get some vine-on (salmonella-free) tomatoes, fresh basil, good olive oil, salt, and freshly cracked pepper. Ooh, or I once had a salad where half the cherry tomatoes were roasted and the other half weren’t. Yum!
My Dutch friend does a great cucumber salad which is thinly sliced cucumber marinaded in vinegar and olive oil (watch out for Chaos) – really simple and yummy!

My SIL made a delicious rice dish – jasmine rice with pineapple, lime, beans, peppers, green onions and cilantro (I left the cilantro off of mine) – very, very yummy.
